Gingerbread Oatmeal

Ingredients:

1 cup old fashioned oats

2/3 cup milk, of your choice, unsweetened

1 cup water

1/2 tsp ground cinnamon

1/4 tsp ground ginger

1 good pinch of each allspice, ground cloves, and kosher salt

1 tsp molasses

1 tbsp chia seeds

1 tbsp maple syrup

Toppings: chopped walnuts, dried cranberries, cold milk

Instructions:

Combine the milk and water in a saucepan and bring to soft boil. Reduce the heat to medium and stir in the oats and spices. Stir and reduce heat to medium low (4 out 10) and place a lid ajar on top. Cook for 5-6 minutes. Stir occasionally. 

Turn off the heat and add the molasses, chia seeds, and maple syrup. Mix well and taste the oats to see if you’d like to add another splash or two of soy milk or more spices/sweetness, etc.

Once perfect, divide into two bowls and top with crunchy toasted walnuts, tangy cranberries, and a splash of cold milk for a fun “milk and cookies” effect
