Protein Peanut Butter Cups

These Protein Peanut Butter Cups with 7g of protein are so good and only require 5 minutes of prep time!

Ingredients:

1 1/4 cups dark chocolate chips

1 1/2 teaspoon coconut oil

1/2 cup creamy peanut butter

1/4 cup vanilla protein powder

1/4 cup vanilla Greek yogurt

1/4 cup crispy rice or crumbled rice cake (optional)

flaky salt (optional, to taste)

Directions:
Prepare a muffin tin with 10 liners. Combine the chocolate chips and coconut oil in a glass bowl and microwave for about 45 seconds (or until melted), stirring every 15 seconds. Fill each liner with a thin layer of the melted chocolate over the bottom and up the sides. Freeze for about 10 minutes. Meanwhile, mix the peanut butter, protein, yogurt, and optional crispy rice. Add the filling to each liner and lightly press to flatten. Top with the remaining melted chocolate and immediately add flaky salt. Freeze another 15 minutes, then store in the fridge.
